Prepare the Ribs
Remove the membrane from the back of the ribs and pat them dry with a paper towel.
Season the Ribs
In a bowl, mix together salt, black pepper, garlic powder, paprika, and brown sugar. Rub this mixture all over the ribs, ensuring an even coating.
Let it Rest
Wrap the seasoned ribs in plastic wrap and let them sit in the refrigerator for at least 1 hour, or overnight for better flavor.
Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add your choice of wood chips for smoking.
Smoke the Ribs
Place the ribs in the smoker, bone side down, and smoke for about 4-5 hours, or until the meat is tender and has a nice smoky flavor.
Add Barbecue Sauce
In the last 30 minutes of smoking, brush the ribs with barbecue sauce to glaze them.
Rest and Serve
Once done, remove the ribs from the smoker, let them rest for 10-15 minutes, then slice and serve with your choice of sides.
