Prepare the Pork
Trim any excess fat from the pork tenderloin and cut it into 1-inch thick medallions.
Bread the Pork
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs mixed with salt, pepper, garlic powder, and paprika. Dip each medallion in flour, then egg, and finally coat with breadcrumb mixture.
Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
Fry the Pork
Carefully place the breaded pork medallions in the hot oil and fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Serve
Serve immediately while hot.
