Prepare the Beef
Preheat your oven to 325°F (163°C). Season the beef roast with salt, black pepper, and thyme. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
Slice the Beef
Remove the roast from the oven and let it rest for 15 minutes. Slice the beef thinly against the grain.
Prepare the Rolls
While the beef is resting, split the sub rolls and toast them lightly under the broiler until golden brown.
Assemble the Sandwiches
Layer sliced roast beef and Swiss cheese inside each toasted sub roll.
Serve with Au Jus
Strain the broth from the roasting pan to use as au jus. Serve the sandwiches with the au jus on the side for dipping.
