Prepare the Coleslaw
In a large bowl, combine the shredded cabbage and carrot. In a separate bowl, mix together the mayonnaise, vinegar, and sugar until smooth. Pour the dressing over the cabbage and carrot mixture, and toss to combine. Refrigerate until serving.
Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add the beer to the dry ingredients, whisking until the batter is smooth and thick.
Cook the Fish
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip each cod fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
Cook the French Fries
In the same oil, fry the french fries according to package instructions or until golden brown and crispy. Drain on paper towels.
Serve
Plate the fried cod with a side of french fries and a generous helping of coleslaw. Enjoy!
