Prepare the Chicken
Pat the chicken breasts dry with paper towels. This helps achieve a good sear.

Season the Chicken
In a small bowl, mix together the cajun seasoning, salt, and black pepper. Rub the spice mix generously over both sides of the chicken breasts.

Heat the Pan
Heat the olive oil in a large skillet over medium-high heat until it shimmers.

Cook the Chicken
Add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is blackened and cooked through (internal temperature should reach 165°F / 75°C).

Prepare the Buns
While the chicken is cooking, slice the onion Kaiser rolls in half and toast them lightly, if desired.

Assemble the Sandwiches
Place the cooked chicken on the bottom half of the toasted rolls. Top with lettuce, sliced tomato, and onion. Cover with the top half of the roll.
