Preparation and Cooking Instructions

    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, smoked chili powder, salt, and black pepper.

    Marinate the Lamb

    Rub the marinade all over the rack of lamb and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Compound Butter

    In a small bowl, combine softened butter with smoked chili powder. Mix well and set aside.

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Toss the quartered red potatoes with olive oil, salt, and black pepper. Spread them on a baking sheet.

    Roast the Potatoes

    Roast the potatoes in the preheated oven for 30-35 minutes or until golden and tender, flipping halfway through.

    Cook the Lamb

    Preheat a grill or a skillet over medium-high heat. Sear the marinated rack of lamb for about 3-4 minutes on each side, then transfer to a baking sheet.

    Finish in the Oven

    Place the lamb in the oven (same as the potatoes) and roast for an additional 15-20 minutes for medium-rare, or until desired doneness.

    Rest and Serve

    Remove the lamb from the oven, allow it to rest for 10 minutes. Slice between the ribs and serve with roasted potatoes and a dollop of smoked chili compound butter.
