Directions for Lobster Bisque
1. Prepare Lobster Stock
In a large pot, melt butter over medium heat. Add chopped onion, carrot, and celery. Sauté until vegetables are soft, about 5-7 minutes. Add garlic and tomato paste, cooking for another 2 minutes.
2. Add Lobster Shells and Wine
Add lobster shells to the pot and stir well. Pour in the dry white wine and let it simmer for about 5 minutes until reduced.
3. Simmer with Stock
Add the fish stock and bring to a boil. Reduce heat and let it simmer for 30 minutes. Strain the mixture to remove shells and solids, returning the liquid to the pot.
4. Make the Bisque Creamy
Stir in the heavy cream and lobster meat, and season with salt and black pepper. Cook for an additional 10 minutes over low heat.
