    Prepare the crust

    Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

    Bake the crust

    Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from oven and set aside to cool.

    Prepare the filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined. Add the sour cream, vanilla extract, and mix until smooth.

    Add eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour filling into crust

    Pour the cream cheese filling into the cooled crust, spreading it evenly.

    Bake the cheesecake

    Bake in the oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.

    Chill

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.

    Serve

    Remove the sides of the springform pan. Slice and serve the cheesecake as desired, garnished with your favorite toppings.
