    Prepare the Garlic

    Preheat the oven to 375°F (190°C). Cut the top off the garlic bulb to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until soft and caramelized.

    Sauté the Mushrooms

    While the garlic is roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the wild mushrooms, thyme, salt, and pepper. Sauté for about 5-7 minutes until the mushrooms are tender and any moisture has evaporated.

    Combine Ingredients

    Once the garlic is done, unwrap it and squeeze the soft cloves into the skillet with the mushrooms. Mix well and remove from heat.

    Assemble the Brie

    Place the Brie cheese on a baking dish. Spoon the mushroom and roasted garlic mixture on top of the Brie.

    Bake the Brie

    Bake in the preheated oven for about 15-20 minutes, until the Brie is soft and melted.

    Prepare the Crostinis

    While the Brie is baking, slice the baguette into thin rounds and arrange them on a baking sheet. Toast in the oven for the last 5-7 minutes of the Brie baking time, or until golden.

    Serve

    Remove the baked Brie from the oven, let it cool slightly, and serve warm with the toasted crostinis.
