Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, 0.5 cups of sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and set aside to cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and continue to beat until light and fluffy. Mix in the sour cream, vanilla extract, and flour until fully incorporated. Add the eggs one at a time, mixing on low speed until just combined after each addition.

Bake the cheesecake
Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for 1 hour or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Chill and serve
After the cheesecake has cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, run a knife around the edges of the pan and carefully remove the sides. Slice and enjoy your New York style cheesecake!
