Prepare Sushi Rice

    Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer for 15 minutes until water is absorbed.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Pour over the warm rice and gently fold to combine. Allow to cool to room temperature.

Prepare Seaweed Salad

    Rehydrate Seaweed

    Soak the seaweed mix in warm water for about 10 minutes or until fully rehydrated. Drain and squeeze out excess water.

    Mix Salad

    In a bowl, combine the rehydrated seaweed with soy sauce, sesame oil, rice vinegar, and sesame seeds. Toss well and set aside.

Assemble Bento Box

    Plate the Ingredients

    In a bento box or compartmentalized plate, place a serving of sushi rice, arrange the tuna sashimi slices, red snapper slices, tuna sushi, salmon sushi, California rolls, and seaweed salad.

    Garnish

    Optionally, garnish with wasabi, pickled ginger, and extra sesame seeds if desired.
