1. Prepare the Garlic Butter Sauce
In a small saucepan, melt 1/2 cup of unsalted butter over low heat. Add 4 cloves of minced garlic and sauté until fragrant, about 2-3 minutes. Set aside.
2. Cook the Shrimp
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side or until they are pink and cooked through. Remove from the skillet and set aside.
3. Sauté the Vegetables
In the same skillet, add a little more olive oil if necessary, then add the snow peas, scallions, and mushrooms. Sauté for 3-4 minutes until they are tender but still crisp.
4. Cook the Egg White Noodles
Meanwhile, cook the egg white noodles according to package instructions. Drain and set aside.
5. Combine Everything
Return the shrimp to the skillet with the vegetables. Add the cooked egg white noodles and pour the garlic butter sauce over the top. Toss everything together until well combined and heated through.
6. Serve
Plate the garlic butter shrimp and noodles. Garnish with toasted sesame seeds and chili crisps to taste before serving.
