Cheesecake Directions
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, brown sugar, oats, unsalted butter, and cinnamon. Mix until crumbly. Press half of the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- 2
Make the cheesecake filling
In a large bowl, beat the cream cheese until smooth. Add granulated sugar and sour cream, mixing until well combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- 3
Assemble the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Sprinkle the remaining streusel mixture on top.
- 4
Bake
Bake in the preheated oven for 50-60 minutes or until the center is set and the edges are lightly golden. Remove from the oven and let it cool to room temperature.
- 5
Chill and serve
Refrigerate for at least 4 hours before serving. Top with fresh strawberries and blueberries before slicing.
