    Prepare the Sriracha Tahini Sauce

    In a small bowl, mix together 3 tablespoons of tahini, 2 tablespoons of sriracha, 1 tablespoon of soy sauce, 1 tablespoon of lemon juice, and a splash of water to achieve a smooth consistency.

    Cook the Noodles

    In a pot of boiling water, cook the egg white noodles according to package instructions. Drain and set aside.

    Stir-fry the Vegetables

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced red onion and mushrooms, and stir-fry until softened, about 3-4 minutes.

    Combine Ingredients

    Add the shredded chicken and organic baby spinach to the skillet, stirring until the spinach is wilted. Then, add the cooked egg white noodles and Sriracha tahini sauce, tossing everything together until well combined.

    Garnish and Serve

    Remove from heat and sprinkle with chopped scallions, chili flakes, and toasted sesame seeds before serving.
