Preparing the Fries

Slice and Fry the Potatoes
Cut the russet potatoes into fries. Rinse them in cold water to remove excess starch. Pat dry with a paper towel. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, drizzle with truffle oil and sprinkle with salt. Toss to coat evenly.
Making Garlic Mayonnaise

Combine Ingredients
In a bowl, mix mayonnaise, minced garlic, and lemon juice until well combined. Set aside.
Frying Parsley

Fry the Parsley
Heat vegetable oil in a small pan over medium heat. Add the fresh parsley and fry for about 30 seconds until crispy. Remove and drain on paper towels.
Serving

Assemble the Dish
Place the truffle fries on a serving plate, drizzle with garlic mayonnaise, sprinkle with grated Parmesan cheese, and top with fried parsley.
