Sambal Roasted Garlic Pangrattato

Method

Fish Preparation

  1. 1

    Prepare the Fish

Preheat the oven to 400°F (200°C). Drizzle the market fish filets with olive oil, and season with salt and black pepper. Place on a baking sheet and roast in the oven for 12-15 minutes, or until the fish flakes easily with a fork.

Mushroom Medley

  1. 2

    Roast the Mushrooms

In a mixing bowl, toss the mixed mushrooms with garlic, thyme, olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 15-20 minutes, or until golden and tender.

Herb Salad

  1. 3

    Prepare the Herb Salad

In a salad bowl, combine mixed greens. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle over the greens and toss to coat.

Sambal Roasted Garlic Pangrattato

  1. 4

    Make the Pangrattato

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in bread crumbs and sambal oelek, cooking until the mixture is golden and crispy. Season with salt and pepper to taste.

Assembly

  1. 5

    Serve the Dish

On a plate, place the roasted fish, top with the mushroom medley, and serve alongside the herb salad. Sprinkle the sambal roasted garlic pangrattato over the top for added crunch.
