Cook the Pork
In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, smoked paprika, brown sugar, cumin, salt, black pepper, apple cider vinegar, and chicken broth. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return it to the sauce and mix well.

Prepare the Sauce
In a heatproof bowl, whisk the egg yolks until they are thick. Melt the butter in a saucepan until it is bubbling, then slowly drizzle it into the yolks while whisking continuously. Add lemon juice and a pinch of salt. Continue whisking until smooth and creamy.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the water. Poach for about 3-4 minutes until the whites are set and the yolks are still runny. Remove with a slotted spoon.
