Preparing the Pork

    Marinate the Pork

    In a large bowl, combine soy sauce, hoisin sauce, Chinese five spice powder, brown sugar, red food coloring, and rice wine. Mix well and add the pork shoulder, ensuring it is fully coated. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

    Roast the Pork

    Preheat the oven to 200°C (390°F). Place the marinated pork on a roasting rack over a baking tray. Roast for about 25-30 minutes or until the pork is crispy and caramelized on the outside. Baste with leftover marinade halfway through.

    Cool and Slice

    Remove the pork from the oven and let it rest for 10 minutes. Slice thinly and set aside.

Making the Cucumber Salad

    Prepare the Cucumber Salad

    Slice the cucumbers thinly and place them in a bowl. In a small bowl, mix rice vinegar, sesame oil, sugar, and salt until dissolved. Pour the dressing over the cucumbers and toss to coat. Sprinkle with chopped green onions and sesame seeds before serving.
