Cook the Rice

Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water, then bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes until the rice is cooked. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Let the rice cool to room temperature.

Prepare the SPAM®

Slice the SPAM® into 8 equal pieces. In a skillet over medium heat, add the slices and sear until golden brown on both sides, about 2-3 minutes per side. Brush the teriyaki sauce over the SPAM® slices during the last minute of cooking.

Assemble the Musubi

Place a sheet of nori on a clean surface. Wet your hands with water to prevent sticking. Take a handful of rice and shape it into a rectangle that fits the width of the nori. Place a piece of teriyaki-glazed SPAM® on top of the rice. Fold the nori over the rice and SPAM®, sealing it with a bit of water if necessary. Repeat with remaining ingredients.

Serve

Cut the musubi in half or quarters and serve at room temperature. Enjoy your SPAM® Musubi!
