Experience a taste of the tropics with our Honolulu Chicken, a succulent grilled chicken breast marinated in a delightful blend of Hawaiian spices. Topped with a vibrant pineapple salsa and served on a bed of coconut-infused rice, this dish is a perfect harmony of sweet and savory flavors, transporting your palate straight to the shores of paradise.
In a bowl, mix together soy sauce, pineapple juice, brown sugar, minced garlic, and minced ginger. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
While the chicken is marinating, slice the bell pepper and carrots. Chop the green onions and set aside.
Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade (reserve the marinade) and sear each breast for about 5-7 minutes on each side until cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add sliced bell pepper and carrots. Stir-fry for about 3-4 minutes until they are tender-crisp. Add the reserved marinade to the skillet and bring to a simmer.
Return the chicken to the skillet and cook for an additional 2-3 minutes until the chicken is heated through and coated in the sauce. Garnish with chopped green onions and toasted sesame seeds before serving.
