Marinate the Chicken
In a bowl, mix together soy sauce, pineapple juice, brown sugar, minced garlic, and minced ginger. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
Prepare the Vegetables
While the chicken is marinating, slice the bell pepper and carrots. Chop the green onions and set aside.
Cook the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade (reserve the marinade) and sear each breast for about 5-7 minutes on each side until cooked through. Remove chicken from the skillet and set aside.
Combine and Serve
Return the chicken to the skillet and cook for an additional 2-3 minutes until the chicken is heated through and coated in the sauce. Garnish with chopped green onions and toasted sesame seeds before serving.
