1. Marinate the Chicken
In a large mixing bowl, combine soy sauce, brown sugar, grated ginger, minced garlic, pineapple juice, sesame oil, and black pepper. Mix well until the sugar is dissolved. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
2. Preheat the Grill
Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly heated and glowing.
3. Grill the Chicken
Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
4. Garnish and Serve
