1. Cook the Rice

Rinse the white rice under cold water until the water runs clear. In a rice cooker or pot, combine 2 cups of rice with 2 1/2 cups of water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.

2. Prepare the Chicken

Marinate the teriyaki chicken in a store-bought or homemade teriyaki sauce for at least 30 minutes. Grill or bake the teriyaki chicken until cooked through, about 6-8 minutes per side on the grill.

3. Make the Huli-Huli Chicken (if desired)

Marinate huli-huli chicken in a mixture of soy sauce, brown sugar, garlic, and ginger for at least 30 minutes. Grill until cooked, basting with the marinade as it cooks.

4. Prepare the Macaroni Salad

Cook 1 cup of elbow macaroni according to package instructions. Drain and rinse under cold water. In a bowl, combine the macaroni with 1 cup of mayonnaise, 1/2 cup of diced celery, 1/2 cup of grated carrots, 1/4 cup of chopped green onions, salt, and pepper to taste. Mix well and refrigerate for at least 30 minutes.

5. Assemble the Plate Lunch

On a plate, serve a generous scoop of rice, topped with the teriyaki chicken and huli-huli chicken (if using). Add a side of macaroni salad. Optionally, you can add a loco moco, which consists of rice topped with a hamburger patty, fried egg, and brown gravy.
