Preparation of the Dough

1

Mix Dry Ingredients

In a large bowl, combine the masa harina, baking powder, and salt.

2

Add Wet Ingredients

In the same bowl, add the vegetable shortening and chicken broth. Mix until a soft dough forms.

Preparation of the Filling

3

Combine Filling Ingredients

In a separate bowl, mix the shredded chicken, Oaxacan cheese, and mole sauce until well combined.

Assembly

4

Prepare Corn Husks

Soak the corn husks in warm water for about 30 minutes, then drain.

5

Assemble Tamales

Place a corn husk on a flat surface, spread about 1/4 cup of dough onto the husk, leaving space at the edges. Add 2 tablespoons of the filling on top of the dough. Fold the sides of the husk over the filling and then fold the bottom up to secure.

Cooking

6

Steam Tamales

Place the tamales upright in a steamer pot. Cover and steam for about 1 hour, or until the dough easily pulls away from the husk.
