Preparing the Peppers
Preheat the oven to 400°F (200°C). Roast the poblano peppers on a baking sheet until the skin is blistered and blackened, about 20 minutes. Remove from oven, place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skins and remove the seeds.
Stuffing the Peppers
Carefully stuff each roasted poblano pepper with the beef and cheese mixture. Place the stuffed peppers in a baking dish.
Serving
