    Prepare the Polenta

    In a large pot, bring the water to a boil. Gradually whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for about 20-25 minutes until thickened. Stir in salt and pepper to taste.

    Make the Bolognese Sauce

    In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened. Add ground beef and sausage, cooking until browned. Drain excess fat.

    Add Tomato and Season

    Stir in the tomato sauce and Italian seasoning. Simmer for 20 minutes, stirring occasionally. Season with salt and pepper as needed.

    Sauté the Greens

    In another pan, add a little olive oil and sauté the fresh spinach until wilted. Season with salt and pepper.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes until the whites are set but yolks are still runny.

    Assemble the Dish

    To serve, spoon polenta onto plates, top with Bolognese sauce, wilted greens, and a poached egg. Garnish with grated Parmesan and chopped chives.
