Make the Flatbread

In a large bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add olive oil and salt, then gradually mix in the flour until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let it rise for 1 hour.

Prepare the Lamb

In a skillet over medium heat, cook the ground lamb until browned, about 5-7 minutes. Season with salt and any additional spices you prefer.

Cook the Flatbread

Preheat a grill or skillet over medium-high heat. Divide the risen dough into 4 equal pieces. Roll each piece into a flatbread shape. Cook each flatbread for about 2-3 minutes on each side until golden and cooked through.

Assemble the Flatbread

Spread a generous layer of dill-garlic yogurt on each flatbread. Top with cooked lamb, pickled red onions, sun-dried tomatoes, crumbled feta, and a drizzle of Aleppo chili oil. Finish with a handful of garden rocket.
