Preparation of Herb Butter

Make the Herb Butter
In a mixing bowl, combine the unsalted butter, chopped parsley, chopped dill, minced garlic, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Shape and Chill the Butter
Transfer the herb butter mixture onto a piece of plastic wrap. Roll it into a log shape and twist the ends to seal. Chill in the refrigerator for at least 30 minutes until firm.
Cooking the Salmon

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Salmon
Take the 8 oz Scottish salmon fillet and pat it dry with a paper towel. Place it on a baking sheet lined with parchment paper.

Add Lemon and Herb Butter
Squeeze the juice of the whole lemon over the salmon fillet. Slice a few pieces of the chilled herb butter and place them on top of the salmon.

Bake the Salmon
Bake the salmon in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
Serving

Serve the Salmon
Remove the salmon from the oven and let it rest for a couple of minutes. Serve warm, garnished with additional fresh herbs if desired.
