Preparing the Ganache

Step 1: Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Remove the saucepan from heat and add the chopped dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth.

Step 3: Add Vanilla and Raspberries
Stir in the vanilla extract and gently fold in the fresh raspberries. Set the ganache aside to cool slightly.
Making the Butter Cream

Step 4: Beat the Butter
In a mixing bowl, beat the softened unsalted butter with an electric mixer on medium speed until smooth and creamy.

Step 5: Incorporate Sugar
Gradually add the powdered sugar, mixing on low speed until combined. Increase the speed to medium and beat until fluffy.

Add the heavy cream and vanilla extract to the mixture, beating until well combined and smooth.
Assembling the Bites

Step 7: Fill Chocolate Cups
Using a spoon, fill each mini chocolate cup with the raspberry chocolate ganache until just full.

Using a piping bag fitted with a star tip, pipe a generous dollop of butter cream on top of each ganache-filled cup.

Place an additional fresh raspberry on top of each butter cream dollop for garnish.

Refrigerate the assembled bites for at least 30 minutes to allow the ganache to set. Serve chilled.
