Macaron Shells

Method

Macaron Shells

  1. 1

    Prepare the Dry Ingredients

In a bowl, sift together the almond flour and powdered sugar to remove any lumps. Set aside.

  2. 2

    Whip Egg Whites

In a clean mixing bowl, whip egg whites until they form soft peaks. Gradually add the granulated sugar while continuing to whip until stiff peaks form.

  3. 3

    Add Flavor and Color

Add vanilla extract and food coloring (if using) to the whipped egg whites, gently folding to combine.

  4. 4

    Combine Mixtures

Gently fold the sifted almond flour and powdered sugar mixture into the whipped egg whites in three additions. Be careful not to deflate the mixture.

  5. 5

    Pipe the Macarons

Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper, spacing them about 1 inch apart.

  6. 6

    Rest the Shells

Let the piped macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.

  7. 7

    Bake the Macarons

Preheat your oven to 300°F (150°C). Bake the macarons for 15-20 minutes, or until they have risen and formed a 'foot'.

  8. 8

    Cool the Shells

Remove the macarons from the oven and let them cool completely on the baking sheet before removing.

Buttercream Filling

  1. 9

    Beat the Butter

In a mixing bowl, beat the unsalted butter on medium speed until creamy and smooth.

  2. 10

    Add Sugar and Flavor

Gradually add the powdered sugar and continue to mix until well combined. Add vanilla extract and heavy cream, mixing until the frosting is light and fluffy.

  3. 11

    Color the Filling

If desired, add food coloring to the buttercream and mix until the desired color is achieved.

  4. 12

    Assemble the Macarons

Pair the macaron shells and pipe a generous amount of buttercream onto the flat side of one shell. Top with another shell to create a sandwich.

  5. 13

    Rest the Filled Macarons

Let the assembled macarons sit in the refrigerator for at least 24 hours to allow the flavors to meld together.
