Lemon Bar Crust

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup of all-purpose flour, 0.5 cups of powdered sugar, 0.5 cups of softened unsalted butter, and 0.25 tsp of salt. Mix until the mixture resembles coarse crumbs.

    Press and Bake

    Press the mixture into the bottom of a greased 8x8 inch baking dish. Bake in the preheated oven for about 15 minutes or until lightly golden.

Lemon Filling

    Mix the Filling

    In a separate bowl, whisk together 1 cup of granulated sugar and 0.25 cups of all-purpose flour. Add in the 3 large eggs, 0.5 cups of fresh lemon juice, and 1 tsp of lemon zest. Mix until smooth.

    Pour and Bake

    Once the crust is done baking, remove it from the oven and pour the lemon filling over the hot crust. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden.

Raspberry Sauce

    Make the Sauce

    In a small saucepan, combine 1 cup of fresh raspberries, 0.25 cups of granulated sugar, and 2 tablespoons of water. Cook over medium heat, stirring gently until the raspberries break down and the mixture thickens, about 5-7 minutes.

    Strain the Sauce

    Remove from heat and strain the sauce through a fine mesh sieve to remove the seeds. Allow to cool before serving.
