Mousse Preparation

    Melt the Chocolate

    Chop the Belgian dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, separate the egg yolks from the egg whites. Whisk the egg yolks with granulated sugar, vanilla extract, and a pinch of salt until light and frothy.

    Combine Chocolate and Egg Mixture

    Gently fold the melted chocolate into the egg yolk mixture until fully combined.

    Beat the Egg Whites

    In a clean bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture in three additions, being cautious not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving cups and refrigerate for at least 2 hours, or until set.

Whipped Cream Preparation

    Whip the Cream

    In a chilled mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.

    Top the Mousse

    Once the mousse has set, spoon the whipped cream on top of each mousse cup.

Garnishing

    Add Garnish

    Sprinkle chocolate shavings on top of the whipped cream. Optionally, add fresh berries for decoration and extra flavor.
