Crust Preparation
Prepare the crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until all the crumbs are well coated.
Form the crust
Press the crumb mixture firmly into the bottom of a lined mini muffin pan, creating a compact layer. Use the back of a spoon or your fingers to ensure it's even and well-formed.
Pre-bake the crust
Preheat the oven to 350°F (175°C) and bake the crust for 5-7 minutes, until lightly golden. Remove from oven and allow to cool while preparing the filling.
Filling Preparation
Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in granulated sugar, sour cream, and vanilla extract, mixing until well combined.
Add the eggs
Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.
Fill the crusts
Carefully spoon the cream cheese mixture into the pre-baked crusts, filling each cavity about 3/4 full.
Baking and Serving
Bake the cheesecake bites
Bake in the preheated oven at 350°F (175°C) for 15-18 minutes, or until the centers are set and slightly puffed.
Cool down
Remove from the oven and let the cheesecake bites cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.
