Method

Chocolate Truffles

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and heavy cream. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth.

    Remove the bowl from heat and stir in the unsalted butter and vanilla extract until fully incorporated.

    Let the mixture cool to room temperature, then cover with plastic wrap and refrigerate for about 1 hour, or until firm.

    Once firm, use a melon baller or a teaspoon to scoop out portions of the chocolate mixture and roll them into balls using your hands.
