Prepare Croissants
Slice each croissant in half horizontally and set aside.

Make Scrambled Eggs
In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently stir with a spatula until the eggs are softly scrambled and slightly runny. Remove from heat and set aside.
Filling Assembly
Assemble Sandwich Fillings
On the bottom half of each croissant, layer the scrambled eggs, followed by slices of ham, and sprinkle the cheddar cheese on top. Place the top half of the croissant over the fillings.
Hollandaise Sauce Preparation
Make Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). While whisking, slowly drizzle in the melted butter until the sauce thickens. Season with salt and cayenne pepper. Remove from heat.
Final Assembly
Top with Hollandaise
Pour the hollandaise sauce generously over the assembled croissant sandwiches. Serve immediately.
