Prepare the Flatbread

Preheat your oven to 400°F (200°C). Lightly brush the flatbreads with olive oil and place them on a baking sheet.

Roast the Garlic

Wrap the head of garlic in aluminum foil and place it in the oven for about 30 minutes or until soft and caramelized. Once done, let it cool, then squeeze the roasted garlic cloves out of their skins.

Scramble the Eggs

In a mixing bowl, whisk together the eggs, milk, sea salt, and black pepper until well combined. Heat a non-stick skillet over medium heat and add a little olive oil. Pour in the egg mixture and gently scramble until the eggs are cooked but still soft. Remove from heat.

Assembling the Flatbread

Build Your Flatbread

Once the flatbreads are crispy and the garlic is roasted, spread the roasted garlic evenly over each flatbread. Layer the scrambled eggs on top, followed by slices of prosciutto, a handful of fresh arugula, and shredded mozzarella cheese.

Final Seasoning

Sprinkle cracked black pepper and sea salt over the top according to your preference.

Bake the Flatbreads

Return the assembled flatbreads to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool slightly before slicing.
