Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. Gradually add in the flour and salt, mixing until a dough forms.
Knead and Rise
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
Shape the Bagels
Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center to form a bagel shape. Let them rest for about 10 minutes.
Egg Wash and Bake
Place the boiled bagels on a baking sheet lined with parchment paper. Brush with egg wash and sprinkle with sesame seeds if desired. Bake for 20-25 minutes or until golden brown.
