Hush Puppies

Method

Preparation

  1. 1

    Prepare the batter

In a large bowl, whisk together the yellow cornmeal, flour, baking powder, salt, and sugar.

  2. 2

    Combine wet ingredients

In another bowl, beat the eggs and mix in the milk. Pour the wet ingredients into the dry ingredients and stir until just combined.

  3. 3

    Add shrimp and bacon

Fold in the chopped shrimp, bacon, and green onions into the batter.

  4. 4

    Heat the oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the hush puppies

Using a spoon or small ice cream scoop, drop the batter into the hot oil, frying in batches until golden brown, about 3-4 minutes per batch.

  6. 6

    Drain and serve

Remove the hush puppies with a slotted spoon and drain on paper towels. Serve warm with cajun remoulade.
