    Prepare the Ingredients

    Gather and prepare all your ingredients. Dice the smoked sausage, chicken, bell pepper, onion, and celery. Mince the garlic.

    Cook the Sausage and Chicken

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the smoked sausage and cook until browned, about 5 minutes. Then add the diced chicken and cook until no longer pink.

    Add Vegetables

    Stir in the diced bell pepper, onion, celery, and garlic. Cook for about 5 minutes until the vegetables are softened.

    Combine Remaining Ingredients

    Add the canned diced tomatoes, chicken broth, rice (or linguini), Cajun seasoning, salt, and black pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20 minutes (for rice) or until the pasta is cooked through. If using rice, check for doneness and add more broth if necessary.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp and stir until they are pink and cooked through.

    Remove from heat, garnish with sliced green onions, and serve hot.
