Prepare the Shrimp

In a bowl, soak the shrimp in buttermilk for at least 30 minutes.

Prepare the Breading

In a shallow dish, mix the flour, cornmeal, cajun seasoning, salt, and black pepper.

Bread the Shrimp

Remove shrimp from buttermilk, allowing excess to drip off, then dredge them in the flour mixture until evenly coated.

Fry the Shrimp

In a large pot, heat vegetable oil to 350°F (175°C). Fry shrimp in batches until golden brown, about 2-3 minutes. Drain on paper towels.

Cajun Remoulade

Mix the Remoulade

In a bowl, combine mayonnaise, Dijon mustard, cajun seasoning, hot sauce, lemon juice, and minced garlic. Mix until smooth.

Sandwich Assembly

Assemble the Po’boys

Spread a generous amount of Cajun remoulade on each piece of bread. Layer with shredded lettuce, fried shrimp, and tomato slices. Top with more remoulade if desired.

Cut sandwiches in half and serve immediately.
