Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted butter until the sauce thickens. Season with cayenne pepper, salt, and black pepper to taste.

Poach the Eggs
In a pot of simmering water, create a gentle whirlpool. Crack each egg into a small bowl and slide it into the water. Poach for about 3-4 minutes or until whites are set but yolks are still runny. Remove with a slotted spoon.
