    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the new potatoes thoroughly and cut them in half. In a bowl, toss the potatoes with 2 tablespoons of olive oil, minced garlic, salt, black pepper, and half of the rosemary. Spread them out on a baking sheet.

    Roast the Potatoes

    Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and tender. Make sure to flip them halfway through for even cooking.

    Cook the Beef Tenderloin

    While the potatoes are roasting, season the beef tenderloin filets with salt and black pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the filets for about 3-4 minutes on each side for medium-rare, or until they reach your desired doneness. Remove them from the skillet and let them rest.

    Prepare the Oysters

    In the same skillet, add the remaining olive oil and the rest of the rosemary. Carefully add the oysters and cook for about 2-3 minutes on each side until they are just cooked through. Remove from heat.

    Serve

    On a plate, arrange the roasted new potatoes, place the beef tenderloin filets next to them, and top with the cooked oysters. Serve with lemon wedges on the side.
