    Prepare the Potatoes

    Wash the new potatoes and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

    Cook the Almonds

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced almonds and sauté until golden brown, about 3-5 minutes. Remove almonds from skillet and set aside.

    Sauté the Trout

    In the same skillet, add the remaining 2 tablespoons of butter. Season the trout fillets with salt and black pepper. Place the fillets in the skillet and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork.

    Finish the Dish

    Once the trout is cooked, drizzle lemon juice over the fillets. Add the toasted almonds back into the skillet, and toss gently to combine.

    Serve

    Serve the trout on a plate alongside the new potatoes. Garnish with additional almonds and lemon slices if desired.
