Prepare the Seafood
In a large skillet, melt half of the butter over medium heat. Add the scallops, shrimp, crab, and crawfish tails. Cook until the seafood is just cooked through, about 4-5 minutes. Remove from the skillet and set aside.

Cook the Mushrooms
In the same skillet, add the remaining butter and the sliced mushrooms. Sauté until the mushrooms are golden brown, about 5 minutes. Add the sherry and cajun seasoning, stirring to combine. Cook for another 2 minutes until the liquid is reduced.

Make the Cheddar Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk and bring to a simmer. Cook until thickened, about 4-5 minutes. Stir in the grated aged cheddar cheese until melted and smooth. Season with salt and black pepper to taste.

Combine and Assemble
Preheat the oven to 180°C (350°F). In a large mixing bowl, combine the seafood mixture, sautéed mushrooms, and cheddar sauce. Transfer the mixture to a greased baking dish.

Top with Crumbs and Bake
Sprinkle the bread crumbs evenly over the top of the seafood mixture. Bake in the preheated oven for 25-30 minutes or until the top is golden and crispy.

Garnish and Serve
Remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
