Marinate the Catfish
In a large bowl, combine the cajun seasoning and buttermilk. Add the catfish fillets, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a shallow dish, mix together the flour, cornmeal, salt, and black pepper.

Cook the Rice
In a saucepan, bring 2 cups of water to a boil. Add the white rice, reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender.

Heat the Oil
In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread and Fry the Catfish
Remove the catfish from the buttermilk and dredge each fillet in the flour-cornmeal mixture. Carefully place the fillets in the hot oil and fry for 3-4 minutes on each side until golden brown and cooked through.

Serve
Remove the catfish from the oil and drain on paper towels. Serve hot with the cooked rice on the side.
