1. Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened.
2. Add Milk and Cheese
Once the grits are cooked, stir in the milk, butter, and cheddar cheese. Season with salt and black pepper to taste. Keep warm.
3. Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and sprinkle with Cajun seasoning. Cook for 3-4 minutes, turning until shrimp are pink and cooked through.
4. Serve
To serve, spoon a generous portion of cheese grits onto a plate and top with the Cajun fried shrimp. Garnish with sliced green onions.
