Prepare the Shrimp
In a large bowl, combine the buttermilk, Cajun seasoning, salt, and black pepper. Add the gulf shrimp to the mixture and let marinate for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together the all-purpose flour and cornstarch. This will be the breading for the shrimp.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Bread the Shrimp
Remove the shrimp from the buttermilk mixture, allowing excess to drip off, and then dredge them in the flour and cornstarch mixture until fully coated.

Fry the Shrimp
Carefully place the coated shrimp in the hot oil in batches. Fry for about 3-4 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the fried shrimp on a plate with cooked white rice and a side of Creole tartar sauce.
