Prepare the Oysters
Rinse the Gulf Coast oysters under cold water and pat them dry with paper towels.

Dust with Corn Flour
In a shallow dish, add corn flour, salt, and black pepper. Dredge each oyster in the corn flour mixture until fully coated.

Heat the Oil
In a large frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the coated oysters to the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Make the Creole Tartar Sauce
In a bowl, combine mayonnaise, finely chopped dill pickles, lemon juice, hot sauce, and salt to taste. Mix well and adjust seasoning as necessary.

Serve
Serve the fried oysters hot over a bed of cooked rice with a side of creole tartar sauce.
