Directions
- 1
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1 minute. Pour in the canned whole tomatoes, breaking them up with a spoon. Season with salt and black pepper. Let it simmer for about 10-15 minutes, stirring occasionally.
- 3
Combine Pasta and Sauce
Add the cooked spaghetti to the skillet with the tomato sauce. Toss to combine, adding reserved pasta water a little at a time to reach desired sauce consistency.
- 4
Add Mozzarella and Basil
Tear the fresh mozzarella into bite-sized pieces and add it to the pasta. Toss gently until the cheese begins to melt. Remove from heat and fold in the fresh basil leaves.
- 5
Serve
Serve the spaghetti con mozzarella hot, garnished with additional basil leaves and a drizzle of olive oil if desired.
