Cook the vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
Deglaze and simmer
Add the red wine and let it simmer for a couple of minutes. Stir in the crushed tomatoes, tomato paste, and salt. Bring to a simmer.
Simmer the sauce
Reduce the heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally. Adjust seasoning with black pepper to taste.
Cook the spaghetti
In a separate pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
Combine and serve
Toss the cooked spaghetti with the Bolognese sauce. Serve hot, garnished with fresh basil and grated Pecorino cheese.
