Cooking Instructions
Cook the Rigatoni
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.
Sauté the Sausage
In a large skillet, heat the olive oil over medium heat. Add the crumbled sausage and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
Make the Vodka Sauce
In the same skillet, add the minced garlic and crushed red pepper flakes. Sauté for about 1 minute until fragrant. Carefully add the vodka and cook for about 2-3 minutes until the alcohol has evaporated slightly.
Add Cream and Tomatoes
Stir in the heavy cream and crushed tomatoes. Bring to a simmer and let cook for about 5 minutes. Season with salt and black pepper to taste.
Combine Ingredients
Add the cooked rigatoni and crumbled sausage back into the skillet. Toss to coat the pasta in the sauce. Stir in the diced fresh mozzarella and grated Parmesan cheese until melted and combined.
Serve
Serve hot, garnished with fresh basil and additional Parmesan cheese, if desired.
